Hoppy Saison aged on Brettanomyces

In keeping with tradition, we made something very special to commemorate our anniversary! This hoppy Saison was aged for 6 months on a wild yeast called Brettanomyces, known for making things a little funky! We then blended it with some fresh Saison and conditioned in corked & caged bottles for a further 4 months. SIX has developed a beautiful bouquet of subtle complexities over the months. Dry and effervescent with a beautiful white cap of foam. Sweet floral notes and juicy pear with lemon peel accompanied with some barnyard funk on the pallet, light spice and a gentle yet assertive bitterness on the finish. These have been aged to perfection and are ready to enjoy, but can also be aged further in your cellar up to 2 years for future enjoyment.
