This is not a beer for the faint of heart! We put a Belgian golden ale, Tripel, and a Quadrupel in red wine barrels with a mix of wild organisms for a year, then blended them back together. It has been developing in the cellar for around two years now and has matured into a complex delight. Like many Flemish ales (think Rodenbach, Duchesse de Bourgone, etc.) this beer is quite tart up front with an assertive acetic acid kick. Behind all that you will find layer upon layer of complexity opening up, with some honey sweetness, deep cured fruit, spices, oak, leather, and countless others.
