Time for a quick story. Back in the 18th Century, when IPA was the hot beer style, the wooden casks used to ship beer usually carried a wild yeast, brettanomyces, with them, causing the beers to become progressively drier. This beer is a throwback to the style, but with modern hops -- Citra and Galaxy with a touch of Azacca. One of the beautiful things about brett is that it can take existing flavours and sometimes create entirely new ones. In this case, our house brett tweaks the hop flavours and aromas to produce a fuzzily peachy flavour. Unlike most IPAs, this one cellars and ages beautifully.
