A very special and extremely limited release, this batch of Saison Davenport went through a secondary ageing on Brettanomyces Bruxellensis (a lovely wild yeast) for 3 months followed by another 6 in these magnificent magnum bottles. The result of this patient process is a deep, full, and endlessly complex nectar with a mild and pleasing funk. Notes of ripe peach, spring flowers, and melon with subtle herb and spice. Fairly dry with a lively effervescence, this beer is pretty close to perfect in our books.
This batch was originally prepared for our 5th anniversary in January. Delayed as a result of lockdowns, we are finally able to make it available! Though it is very much ready to drink now, these bottles will continue to develop in the cellar if you can bare to wait. At a whopping 1.5L these magnums of delicious Saison were specifically engineered to be shared with friends to accompany special occasions.
