In the Before Days, we brewed Wit Saison in anticipation of spring patio season and playoff hockey and basketball. Instead of letting it go to waste, we hit it with some of our house brettanomyces yeast and waited. After a while, it tasted great, but had lost its distinctive bitter orange character, so we added some more bitter orange peel. It's ready now. It's woody and earthy from the brett with a big, bright burst of marmalade on the nose.
